Ist Exchange auch mit Projekt-Mailadressen nutzbar?

In principle, yes. Project mail addresses with the domain of the faculty, institute or other domains are still bound to LRZ projects. In order for accounts of new users at your institution to also receive and use the project mail addresses, you have to import the accounts into your LRZ project, see FAQ section Import LMU accounts.

When importing, you can also set the project mail address as the mail alias. The users can then select this mail address as the main mail address via the Self Services in the IDM portal.
